Sweet and Sour Onions Cipolline in Agrodolce

Ingredients:
• Cipolline (round flat, small onions)
• extra virgin olive oil
• white wine
• vinegar
• sugar
• bay leaves
• salt

Cover the bottom of a large skillet with a very thin layer of olive oil.
Put the onions inside. Barely cover them with white wine.
Sprinkle in the salt. Add a few bay leaves.
Cook on medium heat until the wine has evaporated.
Sprinkle sugar (about 3 tbs every pound of onion). Drizzle red wine vinegar (about 6 tbs for every pound).
Continue to cook until the sugar melts and vinegar evaporates, stirring with care.
